NORTHWEST -- After cooking for approximately 24-hours in a state-of-the-art sous-vide machine (one of several), slices of moist brisket are carefully transferred to a stainless steel serving platter next to rows of freshly sliced daikon radishes, cucumbers, and cilantro.
But rather than taking place at the latest small plate gourmet restaurant, this scene is all unfolding inside the brightly-lit kitchen and counter area of
BONMi, a Vietnamese sandwich and salad shop located in the downtown Golden Triangle Improvement Business District.
Throwing open its doors for the first time just yesterday, BONMi specializes in the traditional Vietnamese sandwiches called bánh mì, as well as an assortment of summer rolls and innovative salads, with each menu item crafted in-house from scratch.
With an emphasis on health and flavor, the restaurant tops each dish with all-natural, high quality ingredients, including garlic lemongrass chicken, garlic black pepper pork, five-spice chicken, chile-garlic tofu, and butternut squash (also cooked sous-vide).
Salads are created from a mixture of mixed greens, pickled vegetables, fresh herbs, and vermicelli noodles, with a variety of unique dressing options (citrus chipotle, pineapple Caesar, sesame citrus).
For those in a hurry, Vietnamese summer rolls provide a healthy alternative to the traditional fast food ‘snackwrap’. Handmade with soft rice paper, julienne vegetables, fresh herbs, vermicelli and either BONMi chicken or butternut squash, each is served with a flavorful hoisin or peanut dipping sauce.
